Strozzapreti (also called Strangolaprovati) are a traditional Italian pasta, especially from the Central Italy regions, such as Romagna, Umbria, Lazio and Marche. They are large tubes, long as much as a thumb. For this reason, they are not always practical. This pasta takes its name from the traditional rapid and violent movement, used by housewives, when they manually twisted and cut strips of dough, after having rolled out dough with a rolling pin and cut it in strips, half an inch large and 2 inch long in size. In that particular moment, women were supposed to express such a strong anger, due to their poverty and hardship, that they could have strangled a priest (“priest strangler” is the literal meaning of strozzapreti).
