The entire process which leads the grape to turn into wine needs vine varieties, soils, optimal climate conditions, dedication and a strong devotion to the territory, that make Apulia be one of the most active Italian regions concerning with wine production. The ritual of the grape harvest, which has always treasured a great charm besides a historical and anthropological value, starts from September, a period during which the grapes reach the right level of desired maturation, more commonly named phenolic maturation. In order to identify a wine of good quality it is necessary to read the abbreviations on the label, that could be different: DOC (“denominazione di origine controllata”), DOCG (“denominazione di origine controllata e garantita”), IGT (“indicazione geografica tipica”), IGP (“indicazione geografica protetta”).
